Easy Taco Casserole | Ep. 29 | Cooking in the Community Kitchen

Ingredients

Easy Taco Casserole

  • Cooking spray

  • 1 1/2 lbs. ground beef or ground chicken

  • 1 cup chopped onion

  • 1 package of taco seasoning mix + 1/2 cup water or 2 tbsp. of taco seasoning as per recipe (found here)

  • 1 large tin of refried beans

  • 1 small tin of sliced black olives

  • 1 small tin diced green chilies

  • 1/2 - 1 cup of salsa

  • 15 tacos shells, broken

  • 2 cups shredded cheese

Optional toppings:

  • shredded lettuce

  • chopped green onions

  • diced tomatoes

  • extra salsa

  • sour cream

  • sliced avocado

This dish can be made gluten free with gluten free taco shells and lactose free with lactose free cheese.

Preparation

Easy Taco casserole

Preheat oven to 350 degrees. Spray a 9” x 13” casserole dish. Cook ground meat and onion in a frying pan until browned.

Add taco seasoning mix, if using the packaged mix, add 1/2 cup water. If using the spice mix, no additional water. Cook through. Taste and adjust seasoning mix. Reduce the heat, and add refried beans, green chilies, olives and salsa. Cook for 3-4 minutes until mixture is warmed through.

Place 1/2 of the broken taco shells on the bottom of the casserole dish. Top with 1/2 of the ground meat mixture. Sprinkle with 1/2 the cheese and repeat layers once again.

Bake for 30 minutes, until cheese is bubbly and brown. Let casserole rest for five minutes before cutting. Serve on a plate or a bowl. Top with your favourite toppings, and serve with extra chips and salsa. ENJOY!
